Caribbean Shrimp with Coconut Rice!

I have spent a pretty good amount of time in the Caribbean in recent years, from the British islands to the Dutch islands of Aruba and Curacao and I have fallen in Love with their foods. The spices and the tecniques are awesome and this is one of my favorites! I was sailing from Bonaire to Curacao and we stopped at this island where a few of the guides on the boat dove for our lunch. They came back with 5 or 6 Lion fish and cooked them over a fire with some lime and made coconut rice. Clearly I can’t get lion fish too easily so I substituted shrimp instead.
What You’ll Need:
Shredded Coconut
Lime Juice
