One of my favorite ways to cook fish is inside of banana leaves! I am lucky enough to have about 100 banana trees in my back yard so I always have plenty of perfect leaves to use! I simply get some fresh shrimp from my fish monger and buy some jasmine rice (my personal favorite but you can substitute any rice!) and some shaved coconut. I don’t even like coconut but this is totally different! You simply put the shrimp inside of a banana leaf with a few slices of lime and wrap it up nice and tight. You can use cooking twine if you want but I just fold it over a few times.
I toast the coconut on the baking tray in the oven for 10 minutes until it’s nice and brown and smells amazing! Then I mix that into my rice and squeeze some lime on it. Once the shrimp is steamed which takes no more than 20 minutes I place some shrimp on top of my coconut rice and a slice of the lime and that’s all there is to it! It’s simple and delicious! If you don’t have the luxury of having banana trees in your back yard you can use parchment paper instead but you will need to add some water to get it to steam.
