Roasted Apricots & Pears w/ Ice Cream


One thing that rarely gets deserved attention is the amazing taste of roasted fruit. The natural sugars explode when you roast it and the flavors become so intense and fantastic! I have made this with all different types of fruits. You can use apples and pineapple or grapes…pick any fruit and I promise you can’t go wrong!
The topping is vital so I like to get creative! This time I just topped it with some chopped walnuts and pomegranate seeds to add a nice tangy flavor. Of course you have to add some Hagen Daaz vanilla bean ice cream!

What You’ll Need:
1 tbsp vanilla extract
1/2 cup raw sugar
Pears or plums
vanilla ice cream
pomegranate seeds
crushed walnuts
juice of 1 orange or tangerine

preheat oven to 425 degrees
slice your fruit into bite-sized pieces and add to a glass bowl.
top with sugar and vanilla extract and tangerine juice.
stir until all fruit is coated with your mixture
then add to baking sheet. be sure all fruit is skin side down.
put in oven for 20 – 25 minutes until sugar is carmelized and fruit is nice and brown.
Remove from the oven and add slices of each fruit to your plate arranged in the center and in sort of a pyramid
Now top your roasted fruit pyramid with ice cream. garnish with pomegranite seeds and walnuts and a pinch of the sugar and serve!
