Mariah’s Seafood Boil and Compound butters

I LOVE seafood and one of my favorite ways to have it is in a boil. It’s great for winter nights with friends or a day out my boat where we just pull up to an island and make a fire and boil a bunch of great stuff! I make a traditional boil…lobster, crab legs, potatoes, corn on the cob, lobster and sometimes I’ll add mussels or clams depending on how many people I’m feeding with it.
lobsterboil6 One of the key ingredients when having lobster is the drawn butter. I like to step it up a notch and make some compound butters. This time I got the zest and juice from a lime and a lemon which gave the butter an amazing flavor. The other one I added some smoked Paprika which is such an exotic spice, and it goes really well with butter and seafood. They are so simple to make…just be sure to use room temperature butter
lobsterboil5 What You’ll Need:
1 cup salted butter
1 1/12 pound maine lobster
4 ears corn
5 red potatoes
2 clusters snow crab
1 tsp smoked paprika
1 lemon
1 lime
2 tbs sea salt

bring pot of water to a rolling boil
add lobster, corn, potatoes, sea salt and crab legs to water

place 1/2 cup butter in bowl. zest 1 lemon and 1 lime and add to butter. add juice from each lime and lemon to butter and stir until creamy.

place 1/2 cup butter in bowl and add smoked paprika and stir until creamy.

once lobster is light red, remove all ingredients from pot onto platter. split lobster into 2 parts down the center and serve with both butters melted
