I love pork. I love pork chops. I love pork chops with applesauce. I love stuffed pork chops, so I put it all together! I went to my butcher and bought some incredible thick cut loin chops bone-in perfect for stuffing! I bought a nice big granny smith apple and french cut green beans. That sounds like a wonderful meal to me!
thick cut bone in pork loin chops stuffed with chopped granny smith apples broiled & served with steamed green beans and whole baby portobello mushrooms sauteed in butter and white wine!
let’s begin! melt some butter in a medium sauce pan and cook your apples until they begin to dissolve. stir them regularly to keep them from burning. once they are mushy remove and let cool for 15 minutes while you prepare your chops to be stuffed!
using a sharp knife make small slice in side of chop and then using the tip of the knife hollow out a deep pocket. stuff chopped apples inside and tie closed with butcher’s twine and place on a roasting pan with an elevated tray allowing heat to surround chops. bake for 20 minutes at 375 degrees. While those are in the oven in your sauce pan that you made the apples in add 2 tablespoons of olive oil or 1/2 stick of butter and whole baby portabella mushrooms. sautee in the butter until tender and add 1/4 cup of white wine increase heat to burn off alcohol for 5 minutes. remove and serve with steamed grean beans! serve your pork chops with your green beans and mushrooms and drizzle sauce from sauce pan over top.
